Playing with recipes (Chicken Soup)

Hello wonderful people. Made this very yummy Chicken Soup and want to share it with you. Its a really easy comfort food to prepare and you can use your leftover chicken to make it.

Ingredients

  • chicken chopped
  • carrots diced
  • tomatoes diced
  • chicken broth
  • garlic crushed
  • egg yolk
  • yogurt
  • lemon juice
  • salt
  • pepper
  • onions chopped
  • parsley chopped
  • bay leave
  • thyme


Method
1. If you are using fresh chicken; boil the chicken with enough ingredient, add some carrots, thyme, bay leave, parsley and onions. When the chicken is cooked, take out and remove the skin and bone and cut to bite sizes.
2. If you are using leftover chicken: you can either cut it to bite sizes and throw it into the chicken broth or roast them for a few minutes in a pan with butter to give your soup a lovely taste.
3. Bring the broth to a boil. Throw in all the vegetables, (you can use frozen vegetables saves your time).
4. Add the chicken and parsley. Taste and Adjust seasoning.
5. Mix the yogurt, egg yolk, corn flour  and lemon in a boil and a little water, mix until it is well blended and pour it into the chicken stock on fire. Bring to a boil.
6. It is ready to eat. Serve with baguette and enjoy.
 N.B - It will fill up your tummy faster than you think so i will advice not to border making another meal, i had an idea we will have the soup for starters and then a main dish but after the soup we were stuffed. lol

Playing with recipes (Yam and Egg Sauce)

Hello food lovers, today we would be making one of my favorite fast meals that is always a winner and can be eaten anytime of the day, its not so heavy but stuffs you up in a good way, very simple, not much ingredients, most likely things you have in your fridge and store already plus as usual you can play with it and add whatever you feel like...Wink

Ingredients
yam
egg
tomatoes diced
onions diced
pepper diced
oil
tomatoes paste (optional)
garlic grated (optional)
salt
pepper
seasoning
sugar (optional)

Method
1. Cut the yam in a circular way (the thickness depends on how thick you like your yam i love my yam really thin so it melts in my mouth), wash and move to a pot, add salt and sugar if you like (i always boil my yam with sugar because it gives it a really yummy taste). Put on heat and allow to boil.
2. Put a pan on heat. Add oil. When its hot enough pour in the onions and garlic (if you are using it). Stir for about 2 mins.
3. Pour in the diced tomatoes and pepper. Add the tomatoes paste (very little if you are using it). Stir. Add salt and seasoning. Taste and adjust seasoning.
4. Check the Yam by using a fork or toothpick to poke it, if it goes through easily it is ready to take out.
5. Break the eggs into the sauce (the amount depends on the quantity of tomatoes and number of people eating, i cooked for two and i always use a minimum of 2 eggs and maximum of 3). Stir for about a minute and remove from heat.
6. And your Yam and Egg Sauce is ready to be munched. Enjoy...Wink

Playing with recipes (Vegetable Salad with Dressing)

This is a very rich and healthy salad with lots of vegetables in it, a nice way to live healthy and eat your vegetables , i spiced mine up with chicken and shrimps that is optional so you can put it only if you want...Enjoy

Ingredients

  • cabbage chopped
  • lettuce chopped
  • eggs diced
  • tomatoes diced
  • cherry tomatoes diced
  • spring onions diced
  • chives diced
  • onions diced
  • broccoli chopped
  • chicken breast cooked and cubed (optional)
  • shrimps cooked and diced (optional)
  • mustard
  • garlic crushed
  • fresh lemon juice
  • vinegar
  • mayonnaise 
  • olive oil
  • salt
  • black pepper


Method

 1. Put all the vegetables in a bowl, the chicken and shrimps and mix together.
 2. Mix the crushed garlic, fresh lemon juice, mayonnaise, little vinegar, salt, black pepper and drizzle little olive oil. Mix well.
3. Pour the mixture into the vegetables and chicken mixture. Mix well.
4. It is ready to be served.

Playing with recipes (Chicken Salad with roasted Almonds and Croutons)

This salad was really fun to make and it ended up exactly as i thought...Delicious...Try it out, play with other vegetables and nuts...

Ingredients

  • chicken breast roasted and cubed
  • almonds roasted (any nuts you have would be fine)
  • lettuce some chopped and some reserved reserved to be used as a bed for the salad
  • cucumber remove seed, cut some diced and the remaining cut into two 
  • eggs diced
  • tomatoes diced
  • broccoli diced
  • onions diced
  • vinegar
  • olive oil
  • croutons
  • salt
  • pepper


Method 

1. Wash the vegetables very well, soak in vinegar to clean well.
2. Make the bed for your salad with the lettuce.
3. Mix the remaining chopped lettuce, cucumber, tomatoes, broccoli, onions, eggs, chicken, roasted nuts, little olive oil, croutons, salt and pepper to taste. Use the cucumber that was cut in half to decorate the salad.
4. It is ready to be served. You can use salad dressing, salad cream or make ranch salad dressing to eat it.

N.B. Throw in the croutons when ready to serve to avoid the bread soaking up, you enjoy it more if it remains crunchy.
        Croutons are bread cut into cubes and toasted .

Playing with recipes (Macaroni Shrimps Salad with Dressing)

Hello beautiful friends, today we would be playing with different salad recipes, vegetable, chicken, shrimps, macaroni, e.t.c. We begin with the Macaroni Shrimps Salad with dressing.

Ingredients

  • macaroni cooked, rinsed and drained 
  • shrimps cleaned and boiled
  • chives leaves diced

Method

1. Make the Salad. In a large bowl, mix together the macaroni, shrimps, chives, onions, tomatoes, and eggs.
2. Make the Dressing. Mix together in a different bowl, mayonnaise, mustard, little sugar, salt to taste, black pepper, vinegar,and fresh lemon juice.
3. Pour the dressing over the salad, mix well.
4. Put in the fridge and serve cold.
5. Enjoy your salad.

Playing with recipes (Fruit salad and cream with chocolate chips)

Hello friends, made a really cool playful fruit salad and want to share it with you...Feel free to put whatever fruits you love in it, the fun part is the whip cream and chocolate chips on top of it, i also added sprinkles to make it look pretty and more playful...hehehe

Ingredients 

  • pineapple
  • apple
  • seedless grapes
  • pear
  • banana
  • whip cream
  • chocolate chips
  • sprinkles


Method

1. Cut all the fruits into bite sizes.
2. Mix them up in plate or cup.
3. Add the whip cream on top, generously sprinkle chocolate chips and add the sprinkle.
4. You probably already finished eating it already...Its irresistible

Playing with recipes (Beef Burger)

Everyone loves burgers, be it beef, chicken, turkey or pork...Burgers are always a delicious treats and they are easy to make too, the good thing is you get to put whatever you want in it and it is almost impossible to destroy burgers because anyway you choose to make it, it will always taste yummy...

Ingredients

  • burger bread
  • minced meat or burger meat
  • cheddar cheese
  • tomatoes
  • lettuce (optional)
  • egg
  • mayonnaise
  • butter
  • oil
  • mustard
  • ketchup (optional)


Method

1. Put your minced meat in a bowl. Add salt, cayenne, onions, egg, chopped parsley, breadcrumbs, little flour and mix very well. I prefer the minced meat to the already prepared burger meat because i control what i put in it.
2. Mold the meat into burger size.
3. Heat a pan with butter and oil. Put the meat in and keep flipping it till its cooked, you can do this on a grill or barbecue too.
4. When the meat is cooked through. Place the cheddar cheese on top and let it melt for few seconds and then take it out. Make a sunny side up egg, add salt and pepper.
5. This process is optional. Mix Mayonnaise, mustard and ketchup.Divide the bread into two equal half. Rub it in the middle of the bread or you can simply spread butter on it.
6. Place the cooked meat in the middle of the burger bread, (You can put lettuce below and put the meat on top the lettuce) place the fried egg on top the cheese, add tomatoes, onions if you want.
7. Your burger is ready, serve with fries and salad or just munch away like that...Enjoy

Playing with recipes (Chicken and Shrimps Sandwich)

I have always wanted to make a proper sandwich not just stuffing my toast with any vegetable and calling it a sandwich and so decided to try this one out after we got a sandwich machine.
It turned out great, yummy and exactly how i had imagined it to taste and look, the good thing is you can put whatever you love inside it and i bet it will taste delicious anyways...Wink

Ingredients

  • Chicken breast cooked and roasted, shredded 
  • Shrimps cooked and roasted, diced
  • eggs boiled and diced
  • Spring onions diced
  • lettuce chopped
  • tomatoes diced
  • cabbage diced
  • mayonnaise
  • onions diced
  • mustard
  • little butter optional
  • salt
  • cayenne pepper
  • olive oil


Method

1. Boil the chicken breast with adequate seasoning, add the shrimps when the chicken is almost cooked. Drain. Shred the chicken, dice the shrimps and set aside.
2. Heat a pan with tiny butter, pour in the chicken and shrimps and begin to stir until its nicely roasted not burnt.
3. In a bowl mix the mayonnaise, mustard, little olive oil, salt, little cayenne pepper. Pour in your tomatoes, cabbage, lettuce, onions, spring onions, chicken, shrimps, eggs, and mix well until well blended.
4. This step is optional, bring out your bread and spread a mixture of butter, mayonnaise and mustard on it.
5. Put the bread on the sandwich machine, generously put the vegetable mixture on top, put another bread ontop and do same and then cover it with the last bread (this is if you are doing it in 2 layers, you can do just one layer if you want i was just experimenting with my new machine).
5. Cover the machine and keep checking until it gets to your desired brown crusts.
6. And your sandwich is ready to hit your tummy...Enjoy my friends

Playing with recipes (Twice baked potato pie and minced meat)

Hello my lovely friends, Today we will be sharing a new recipe we played with, potatoes, minced meat and vegetables. It was a really delicious meal and its even better the day after. Its a twist to Shepard pie, a yummy twist if i may add...wink

Ingredients

  • potatoes
  • minced meat
  • cheddar cheese
  • onions chopped
  • boiled bacon sliced
  • green onion chopped
  • tomatoes chopped
  • dried sage leaves
  • egg
  • bread crumbs
  • salt
  • pepper
  • garlic
  • ketchup


Method
1. Boil your potatoes and some garlic gloves in it. When it is cooked, drain the water and mash the potatoes with the garlic, (you may add butter, milk, nutmeg and black pepper if you wish,i did to mine but its optional)
2. Turn on your oven and set at 180c/350f.
3. In a bowl mix the minced meat, onions, grated garlic, ketchup, breadcrumbs, egg, sage, salt and pepper until well blended.
4. Spread the mixed minced meat into an ungreased oven proof pan/dish, spread the mashed potatoes over top and put in the oven.
5. Bake for 40/50 minutes. Bring it out and sprinkle the cheese generously on top put back for like 5 minutes and bring out again then sprinkle the tomatoes, bacon and green onions on top and put back for another 10/15 minutes.
6. Enjoy your meal...

Playing with recipes (Fries, vegetable omelette and special fries dip sauce)

Hello my food lovers, today we will be trying something pretty simple and easy to prepare and can be used as breakfast or dinner, with ingredients you can also play with yourselves by adding more or reducing as the case may be...

Ingredients

  • potatoes
  • eggs
  • butter
  • carrots diced
  • green pepper diced
  • sausages diced
  • onions diced
  • yellow pepper diced
  • green peas
  • mayonnaise
  • ketchup
  • mustard
  • salt
  • pepper
  • garlic powder
  • sugar


Method

1. Deep fry your potatoes that is already cut into sticks (fries).
2. Break the eggs into a bowl, add all the diced vegetables, onions, sausages, salt, garlic powder, pepper and whisk until well mixed.
3. Heat butter in a pan, and pour in the egg mixture when its hot. Fry and flip over to the other side don't get distracted to avoid burning it because it will take few seconds to prepare.
4. Mix up the dip sauce for the fries: in a bowl pour ketchup, add mayonnaise, mustard, salt, pepper and little sugar. Mix well together, taste and adjust seasoning. (the quantity to mix is determined by the amount of people eating the fries).
5. And your food is ready to be enjoyed...wink...

Playing with Recipes (Mashed Potatoes, Mushroom sauce, Crispy Chicken and Mushroom)

Today i will be sharing a lovely recipe i played with during the week and it was a hit! This crispy chicken is different from the one we tried the last time, gives a variation to play with. We totally loved the meal and will most definitely make it a regular on our food menu...Its very easy to prepare, not time consuming, relaxing comfort food that the whole family would love and you would be glad you made it...Its a promise...Wink

Ingredients
  • potatoes 
  • chicken
  • mushroom
  • flour
  • corn
  • starch
  • cream
  • peas
  • green pepper
  • carrot
  • mustard
  • butter
  • oil for deep frying
  • salt
  • milk
  • garlic
  • pepper
  • egg
  • parsley
  • parmesan cheese
  • black pepper
  • nutmeg
  • bread crumbs 
  • baking powder
  • water


Method

1. Peel the potatoes and boil them with enough salt.
2. To make the mushroom sauce : Put a pan on heat and add a little butter. When its hot stir in the onions and garlic, add the mushroom and let it sweat out.
3. Pour in cream, Add the mustard (about a tea spoon depending on the quantity you are preparing), stir in some of the parsley, carrot, green pepper, green peas, salt and pepper. Taste and adjust seasoning. And your mushroom sauce is ready.
4. To make the crispy chicken and mushroom :  Mix flour, corn starch, salt, baking powder, water and milk in a bowl until it forms a smooth watering paste.
5. Break the egg and whisk it in a separate bowl and set aside, in a 3rd bowl add the breadcrumbs.
6.Dip the chicken and mushroom one after the other into the batter mixture and allow excess drip off, do same in the egg mixture and finally roll them inside the breadcrumbs and make sure its evenly coated and when done. Heat oil until very hot and deep fry until golden brown.
7. To make the mash potatoes : Drain the potatoes, add the remaining parsley, black pepper, grated nutmeg, milk, butter, grated parmesan cheese and mash with a potato masher until its well mashed...lol
8. Your meal is ready to be served...Enjoy

Playing with recipes (Parmesan Chicken, Chinese Fried Rice and Tomatoes Sauce)

Hello friends, Today we would learn how to make easy oven cooked Parmesan Chicken, fast and easy Chinese fried rice and a tomatoes sauce to go with it. Enjoy.

Ingredients

  • chicken breast
  • rice
  • mixed frozen vegetables
  • cumin powder
  • paprika 
  • cayenne pepper
  • salt
  • soy sauce
  • sesame oil
  • butter
  • fresh tomatoes diced
  • green pepper diced
  • tomatoes paste
  • seasoning
  • Italian seasoning
  • onion
  • garlic powder
  • eggs
  • olive oil
  • curry powder
  • parmesan cheese grated

Method

1. Put your rice on heat and parboil it. Make sure you chicken breast is at room temperature. Turn on your oven to 170oc.
2. Gently massage you chicken breast with salt, paprika, cayenne pepper, garlic powder, Italian seasoning, cumin powder, curry powder, seasoning, sprinkle olive oil on it and let it rest for a few minutes then put it in the oven rack for 25 - 30 minutes.
3. Bring the chicken out, generously sprinkle the Parmesan cheese on top and put it back in the oven until the cheese is melted then it is ready to be served.
4. The rice should be in a strainer at this point. Put a pan on fire big enough to take your rice. Add sesame oil and butter. When hot add the onion and garlic, stir for like 3 minutes. Stir in the frozen vegetables and keep stirring for like 3 minutes so the vegetables still retain their nutrients.
5. Break the egg in a bowl, add soy sauce, very little salt, sesame oil, cayenne or black pepper and whisk. In a separate pan, heat a little sesame oil or butter or little of both. Pour in the egg mixture. Allow to set, make sure it doesn't get burnt. Remove to a chopping board and dice it.
6. Pour the diced fried egg into the vegetable mixture and turn. Stir in the rice and mix well.
7. Lets make the tomatoes sauce. Heat little olive oil and butter in a pan. Stir in the onion and garlic, add the diced tomatoes, tomatoes paste and green pepper. Add chili pepper or cayenne pepper or black pepper depending on how you like your chili. Add salt, seasoning and a little sugar to balance the acidity in the tomatoes.
8. Your dinner is ready to be served. Preparations and everything should be less than 50 minutes...Enjoy.

Playing with Recipes (Potato Egg Bake Breakfast)

Trying out a really delicious breakfast recipe today very simple and pretty straight forward with not much ingredients you can achieve this yummy egg bake breakfast that would sure be a delight to whoever taste it...

Ingredients

  • eggs
  • Potatoes
  • cheddar cheese shredded 
  • salt
  • pepper
  • milk
  • worcestershire sauce
  • green pepper diced
  • tomatoes diced
  • onions diced
  • butter

Method

1. Dice the potatoes to mouth size chunks. Add salt and pepper.
2. Melt butter in a pan. Carefully add the potatoes when it is hot. keep turning its sides and make sure it doesn't get burnt.
3. Preheat your oven to 170
4. Break the eggs in a bowl , add milk, salt, pepper, worcestershire, onions, green pepper, tomatoes, some of the cheese. Whisk well.
5. Pour over the potato. Spread cheddar cheese on top and put in the oven uncovered.
6. Bake for 40-60 minutes or until a toothpick is inserted and comes out dry.
7. And it is ready to eat. Serve with toast and enjoy.

Playing with recipes (Vegetable Stir-Fry)

Made an Asian inspired fried rice the other day and wanted a sauce to go with it then i realized i had a number of vegetables in the fridge and decided to make a vegetable stir-fry...you can always add more vegetables like broccoli,cauliflower e.t.c and chili if you like spicy food, peanut oil would be perfect for it too but didn't have so i used sesame and soya oil. This is a really good meal, very nutritious and tasty.

Ingredients
  • cabbage cut into big pieces
  • carrot cut thinly diagonally 
  • green pepper cut into big pieces
  • mushroom roughly chopped
  • peas
  • cayenne pepper
  • runner beans chopped
  • spring onions chopped
  • onions chopped
  • soy sauce
  • cornstarch
  • sugar
  • ginger
  • chicken stock/vegetable stock
  • sesame oil
  • soya oil

Method

1. Put a pan on heat. Add little sesame and soya oil. When hot pour in the onions and ginger and stir.
2. Add the mushrooms, carrots, cabbage, green pepper and stir. Add the spring onions, runner beans and peas.
3. In a small bowl mix the stock (if you don't have you can melt seasoning in water), soy sauce and cornstarch and a tbs of sugar, mix and make sure it is well dissolved.
4. Pour into the vegetable sauce, add cayenne pepper and keep stirring, make sure you don't over cook your vegetables. When it is thick, it is ready to be served with your rice.

Playing with recipes (Fried Rice)

Fried rice is another dish that you will find being served on Christmas or New Year day apart from Jollof Rice with same compliments thought Salad or Moi moi with Chicken or Turkey.
Like i said for the Jollof rice this also have several ways to make it but i don't think the process should be complicated because it is a simple and straight forward dish. Make sure you add a lot of vegetables to make it very colorful.
I couldn't find Liver so i used sausage but make sure you get Liver, it is an important ingredient in Fried Rice. Wink.

Ingredients

  • rice
  • chicken stock
  • curry
  • fried rice spices
  • thyme
  • butter
  • salt
  • white pepper
  • white onions diced
  • seasoning
  • carrots diced
  • green pepper diced
  • yellow bell pepper diced
  • red bell pepper diced
  • runner beans cut into round pieces 
  • green peas
  • sweet corn
  • liver meat cooked and diced


Method

1. Put a pot on heat with the chicken stock, water, salt, seasoning, white pepper, thyme, plenty curry and fried rice spice. N.B- The two last ingredients will have great influence on the color if you want a white Fried rice you may skip putting the fried rice spice and put little or no curry at all and also not too much chicken stock which means more seasoning. Add butter some people prefer using groundnut oil, i love using butter. Cover and allow to boil.
2. Make sure all your vegetables are finely diced. Do not over cook you rice, it wouldn't be nice and it would get spoilt fast.
3. Put a pan on heat and steam the vegetables. Add butter and little oil. when it is hot add the onions stir for few minutes and add the other vegetables with the liver. Add little salt and seasoning. Stir for a while don't cook the vegetables. Remove from heat and set aside.
4. Check your rice. Taste and adjust seasoning. If the water in it is totally dried. Pour in the Vegetables and stir with a wooden spatula until it is well mixed, turn gently avoid doing it too hard so you don't mash rice and end up with a portage...lol. Don't use all the vegetables leave some to put on top when you put the rice in the cooler. And it is ready to be served...With salad, moi-moi or plantain and chicken. Enjoy you holidays...


Nigerian Fried Rice and Chicken

It is Christmas season again and it is only normal to have Rice and Chicken served to the kids and visitors. Jollof rice and Fried Rice is the top on the list in Nigeria, so we would be sharing simple recipes for jollof and fried rice. You cam make either moi moi or salad to serve with it or even both, you can also make both rice and serve little portions together. As it is for every meal there are a 1000 ways to prepare these dishes but this is how i make mine. Easy and straight forward.

Ingredients
  • chicken stock
  • rice
  • butter
  • tomatoes blended
  • tomatoes paste
  • seasoning
  • salt
  • pepper
  • curry
  • thyme
  • rosemary
  • onions
  • Vegetables (are optional you can make your jollof rice without them but they make it colorful and nice)
  • carrots diced
  • green pepper diced
  • runner beans cut in small circles
  • green peas
  • sweet corn


Method

1a. There are two ways i usually make it depending on my mood...lol. if you usually parboil your rice at this point you must have your parboiled rice ready in the sifter. Put a pot big enough to hold the rice on heat. Pour a little oil and butter, when its hot add the onions and then the blended tomatoes and tomatoes paste stir for a while and pour in the chicken stock, add salt, pepper, curry, thyme, rosemary, seasoning and water. Allow to boil very well so the raw tomatoes taste will no longer be there and then pour in your rice. Cover and allow cook.
1b. This is the second method i use. Put a pot big enough for the rice on heat. Add the meat stock, blended tomatoes, tomatoes paste, water, salt, curry, thyme, rosemary, seasoning, pepper and butter. Allow to boil very very well. And then add your washed rice or your parboiled rice. Cover and allow to cook.
2. Open the pot and check if the rice is cooked or if it requires more water. Taste to adjust seasoning. When you want to turn the rice make sure you use only a wooden spatula what we know here as Eba stick...hehehe...do not use iron spoon. And make sure the heat is circulating well if you are cooking a large quantity to avoid some getting cooked more than the others, sometimes what you can also do is cover the top of the rice before you put the lid on, with a thick nylon or a bag like the bag you buy rice in, so it can get cooked evenly.
3. Taste and make sure all the ingredients are working well together if not add salt or seasoning if it is lacking. Turn to make the rice even and remove from heat because it will still continue cooking in the cooler so avoid over cooking it.
4. Put a pan on heat. Add butter and a little oil. Add onions, stir for about 2 minutes. Add all the vegetables one after the other and stir. Add a little salt and seasoning.
5. Add the vegetables to the rice and turn avoid mashing, turn gently. Start putting your rice in the cooler and be adding more vegetable but don't stir, just be adding little little on top every step until you are done. And your jollof rice is ready to be served with either your moi moi or salad and chicken.

Playing with recipes (Breakfast Hash)

I found this recipe while searching for breakfast recipes, wanted to try something different even though it still had eggs in it without the eggs the Hash alone is a complete meal and the good thing about it is that you can put whatever you feel like putting corned beef, sausages, minced meat and also any left over vegetables in your fridge and whatever herbs you have can serve too. It felt like a perfect classic breakfast but i must warn you it is heavy...Yum

Ingredients

  • potatoes chopped into bite sizes 
  • minced meat
  • butter
  • onion
  • garlic
  • tomatoes diced into small pieces
  • green pepper diced into small pieces
  • red pepper diced into small pieces
  • yellow pepper diced into small pieces
  • frozen vegetables
  • rosemary
  • thyme
  • sausages chopped 
  • vegetable oil
  • cayenne pepper
  • salt 
  • black pepper


Method

1. Boil the potatoes with salt until a fork tender but not too soft, take out of the heat and drain. Set aside.
2. Put a pan on heat and add butter and a little oil.
3. Stir in the onions and garlic. Stir for like 3 mins. Add the minced meat or whatever meat you are using and stir till it is cooked. Add all the vegetables and sausages. Add salt, black pepper, cayenne pepper, rosemary and thyme or whatever herbs you are using.
4. Pour the potatoes in, keep stirring for about 10 minutes and turn off the heat.
5. Fry your eggs and you breakfast is ready. You can serve with toast if you want but i feel its already heavy as it is and would stuff you up. Enjoy

Playing with recipes (Donuts)

The last time i made Donuts i tried Sugar glazed and chocolate with sprinkles dressing on it came out nice stuffed myself with as many as my tummy can take...hehehe...But will be making plain donuts today though.

Ingredients

  • flour
  • yeast
  • shortening/margarine
  • eggs
  • milk
  • nutmeg
  • salt
  • sugar
  • warm water
  • oil for frying


Method

1. Sprinkle the yeast in half a cup of warm water and let dissolve for 5mins.
2. Heat the milk in the microwave or on a cooker and allow it to be warm enough not too hot.
3. Pour the warm milk on top the shortening (I used margarine) and let the milk melt it. Set aside to cool down.
4. Whisk 2 eggs and set aside.
5. In a big bowl, pour the milk and margarine or shortening mixture, the yeast mixture, the eggs, nutmeg, salt (a pinch) and sugar. Mix well. Add Flour little by little until the dough isn't sticky again.
6. Move to a floured flat surface and begin to knead for about 5mins and transfer to an oiled boil, cover and set aside in a warm place for about an hour or until it is double in size.
7. Put the dough back on the floured flat surface and roll out. Cut the dough with a donut cutter or just improvise like i did with any cover from your kitchen and do same for the ring.
8. Move to a floured tray or baking sheet and cover lightly with a kitchen towel and let sit for 30mins to rise again.
9. Heat the oil and when its very hot start frying until golden brown remove. Let cool down for few minutes and it is ready to be munched...







Playing with recipes (Puff Puff)

Been a while i ate Puff Puff, its fun to eat and serve as small chops at parties and love the fact that it is so simple easy and not complicated to make at all. Decided to make me some after a long crave for it and that i did and was glad when i finished eating it...hehehe.

Ingredients
  • Flour
  • yeast
  • Grated/grounded nutmeg
  • sugar
  • salt (a pinch)
  • warm water for mixing
  • oil for frying


Method

1. Add the flour, yeast, sugar, salt and nutmeg in a bowl and mix together.
2. Add water little by little until all the ingredients are well mixed. Keep mixing until it is smooth and not too watery.
3. Cover the bowl with foil paper very tight so air wouldn't escape. Leave to rise for about 45 minutes.
4. When you open it, it should have risen in quantity and there would be bubbles in the batter that is how you know it is ready to fry.
5. Pour enough oil in a deep pot and heat until it is very hot.
6. Use your hands to scoop the Puff Puff mixture and let it come out through your thumb to give it a spherical shape, make sure you don't put in too much at once so there will be enough space in the pot.
7. Fry until golden brown, remove and put on a paper towel to soak out the oil and your Puff Puff is ready to be eaten. Enjoy with a bottle of mineral or juice...Lol.
